Wild Rice Salad with Shiitake Mushrooms

Description

Wild rice salad paired with a rich buttery flavor of the Shiitake mushroom.

Ingredients

2 c
wild rice (Soak minimum of one hour, preferably overnight.)
1 c
organic vegetable or chicken broth
1 pn
sea salt
1  
bay or kaffir lime leaf (Then bring to a boil.)
1 t
safflower or sunflower oil (Diced, and saute until caramelized.)
2 c
shiitake mushroom (Sliced)
1 c
carrots (finely diced, and saute until softening. Now remove from heat and cool:)
1⁄2 c
red pepper (Core and Medium Diced)
1⁄2 c
yellow pepper (Core and Medium Diced)
1⁄4 c
veg or chicken broth
2⁄3 T
olive or sunflower oil
3⁄4 T
lime juice
2 pn
herbs and spices (Of your choice)
1 pn
sea salt
1 T
arrowroot or organic cornstarch powder

Instructions

Wildrice Salad for 6-8:

1 bag Wild Rice, (about 2 cups) soak minimum of one hour, preferably overnight. Drain off soak water, spread rice evenly on the bottom of a medium heavy bottomed pot and cover with water. Add one cup organic Vegetable OR Chicken Broth, a pinch of sea salt and 1 Bay OR Kaffir Lime Leaf, then bring to a boil. Once boiling, lower heat to simmer, cover with fitted lid, and simmer for another 25 minutes. Remove from heat and let stand 10 minutes before removing lid.

Meanwhile add 1 tsp Safflower or Sunflower oil into a small skillet and place pan over medium heat. Add 1 cup Red Onions, diced, and saute until caramelized. ADD 2 cups EACH Shittake Mushrooms, sliced, and 1 cup Carrots, finely diced, and saute until softening. Now remove from heat and cool: fold in 1 cup Organic Sweet Peas, thawed; and 1/2 cup each Yellow and Red Sweet Bell Pepper, core & medium dice.

Dressing: in a small sauce pan, whisk together 1/4 cup Veg OR Chicken Broth; 2-3 Tbs. Olive OR Sunflower Oil, 3-4 Tbs. Lime Juice, a total of 2 Tbs Herbs and Spices of your choice, pinch of sea salt. Whisk in 1 Tbs. Arrowroot OR organic Cornstarch Powder, place over medium heat and bring to a boil. Once thickened, remove from heat and let cool before tossing with salad.

Seasoning Variations: try one of these!
#1: 1 Tbs. Tarragon; 2 tsp Thyme; 1 tsp Lemon Pepper
#2: 1 Tbs. Basil; 1 tsp Rosemary Powder; 1/2-1 tsp White Pepper
#3: 1 Tbs. Dill; 2 tsp Lemon Pepper

Garnish Options: top with 1/3 cup Seeds or Nuts of your choice!
